This one at White On Rice Couple is very simple and straight-forward, with a focus on perfectly poached eggs — as it should be. Serve this with thick crusty bread that’s been brushed with good olive oil and toasted (on a grill, if possible) for pretty much the best ever breakfast-for-dinner.

I’m not exactly sure why, but I’m smitten with this very easy Sticky Sausage Traybake (which is British for sheet pan dinner) at Taming Twins. I mean, it can’t get any easier and the idea of using marmalade to glaze savory sausages is genius. Plus, Sarah pulls this off with frozen mixed veggies (which she calls Casserole mix). You can do the same, or just chop up a variety of what you have on hand.

Okay, if these Sweet & Smoky Pulled Pork Cornbread Waffle Sliders at A Simple Pantry aren’t a perfect Friday night dinner, I don’t know what is. The pork comes together in the slow cooker (and can be made ahead of time), and the simple waffle batter cooks up fast in an iron while you toss a bag of cole slaw with dressing. Oh, and with a meal like this, on a Friday night, I say that slaw is veggie enough. Because we all have to live a little.
