Teriyaki Zucchini Noodles | Eat Well 101
I’m all for zoodles, but to be honest, they alone don’t satisfy my three guys (two growing, one nearly 6′ 5″, all with big appetites). That’s why I adapt this recipe for Teriyaki Zucchini Noodles that Jane found while looking for super fast pasta recipes by tossing zucchini noodles with real ones. Make one and a half times the amount of sauce to ensure that you have enough to coat the extra heft — a half pound of Chinese-style noodles or linguini work well — and watch this go down. Perfect for #MeatlessMonday.
Gingered Salmon with Grilled Corn and Watercress Salad | Photo by David Malosh for Food & Wine
Many of us are either in the throes of back-to-school or gearing up for it, but produce is still in summer mode. Grab some sweet summer corn and whip up this delicious-sounding Gingered Salmon with Grilled Corn and Watercress Salad at Food & Wine. If you’ve never had watercress, rest assured that it’s a pretty mild green. If you can’t find it, though, or you’d like to stick to something with which you’re familiar, substitute arugula or spinach.
Keep firing up that grill! I won’t stop until it gets cold and have a feeling that I’ll be making these Chimichurri Steak Tacos at Pinch of Yum more than once in that time. I love that Lindsay pictures these tacos with nothing more than corn on the cob and some fresh bell peppers for veg. Perfect and so, so easy.
Easy Chicken Gyros & Tzatziki Sauce | Creme de la Crumb
Not only does this Chicken Gyro meal that Kate shared while rounding up 15 30-minute meals for frazzled back-to-school nights look delicious, but she also says that her kids love it. Tried and true. I’m in.
More corn, because it’ll be gone soon! This simple, fresh, summery Cilantro Corn Pizza at Life as a Strawberry has my mouth watering. I can’t wait to make it and can even use homemade pizza dough thanks to Jessie’s 15-Minute Pizza Dough recipe. Genius! Of course, if you’d rather, you can use dough picked up from your local pizzeria. No judgments here.
